Iftar Series 2021 - Day 2: Bananas Flambé Pancakes

Hey there Masset Chefs!


It's time for the sweets! This is not your regular recipe of pancakes so keep on reading. You might find yourself in the kitchen making them as you read them ;)





INGREDIENTS

  • 3 cups flour

  • 2 teaspoons baking powder

  • 2 teaspoons salt

  • 1/4 cup sugar

  • 3 cups milk

  • 2 eggs (separate yolks from whites)

  • 2 teaspoons vanilla

  • 4 tablespoons butter (melted)

  • 2 bananas

Sauce:

  • 1 stick of butter

  • 1/2 cup of heavy cream

  • 1 teaspoon of vanilla extract

  • 1 cup of Sugar n Spice


PREPARATION


  1. Mix all the dry ingredients in one bowl: flour, baking powder, salt and sugar

  2. Melt butter then whisk with all the wet ingredients in a separate bowl: milk, egg yolks and vanilla

  3. Gently fold dry ingredients mix in the wet mix. Make sure not to over mix. You now have a pancake mix!

  4. Whisk the egg whites with a pinch of salt on another bowl until it becomes whipped cream, then fold in the pancake mix

  5. Peel and chop 2 bananas and reserve

  6. Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides

  7. Now it's time to make the sauce. In a large skillet, over medium heat, melt butter. Stir in heavy cream, vanilla and sugar n spice. When mixture begins to bubble, place bananas in pan. Cook until bananas are hot, 1 to 2 minutes.

  8. Serve hot! You can add a scoop of vanilla ice-cream; your stomach will thank you for that addition lol
