Iftar Series - Day 15: Ultra-Moist Homemade Chocolate Chips Pancakes

Hey there Masset Chefs!


Don't get me wrong, I love me some pre-made pancakes. However, I have lately been craving some good homemade pancakes, with the right amount of moisture and an unique aroma! Yuuum! Below is a superb recipe for chocolate chip pancakes, inspired by a French recipe. This recipe includes the two essential ingredients to bring that moisture to life: beating the whites in snow gives an incredible softness and adding yogurt makes the whole difference, trust me! If you decide to replace the milk with almond milk, it will add a really good little scent.

INGREDIENTS

  • 2 eggs

  • 1/2 cup of powdered cane sugar

  • 1 teaspoon Chai

  • 1 tablespoon of Orange blossom

  • 1 teaspoon Ginger Mix

  • 1 vanilla yogurt

  • 1 3/4 cup of self rising flour

  • 1/4 cup of butter or margarine

  • 3/4 cup of evaporated milk or almond milk

  • 50 to 100 g of chocolate chips

PREPARATION

  1. Separate the egg whites from the yolks.

  2. Heat the milk in a small saucepan to melt the butter or margarine. In a bowl, whip the yolks with the sugar until the mixture turns white.

  3. Add a little flour then a little milk and so on until all the ingredients are used up. Whisk well so you don't have lumps.

  4. Whisk the egg whites until stiff. Incorporate them into the dough using a flexible spatula, being careful not to drop the egg whites. Let it rest for like 15 minutes.

  5. Add the chocolate chips.

  6. Heat a little oil in a pan over medium heat. Place 3 or 4 ladles of dough and cook for about a minute. Turn the pancakes over and bake for about 30 seconds on the other side. Bake all the pancakes this way.

Serve them still warm wit butter and honey/syrup drizzled on them.
