Iftar Series - Day 18: Shawarma - Combo of Chicken and Lamb

Hey there Masset Chefs!


Pause. Imagine yourself tasting a delicious homemade sandwich with fragrant meat, marinated in a creamy and spicy cream. Are your taste buds starting to get carried away? Hmmm… who wouldn't be tempted to bite in a delicious shawarma full of flavors?

Brace yourselves because now you'll be able to you make this classic oriental sandwich in the comfort of your home thanks to this recipe!

INGREDIENTS

  • 4 chicken breasts

  • 1/2 pound of lamb or beef meat

  • 2 tablespoons Curry-ous

  • 2 tablespoons Harira

  • 2 tablespoons Mechoui

  • 3 tablespoons of 7-Herbs and Garlic

  • 1/2 cup of lemon juice

  • 1/3 cup of vinegar

  • 1 teaspoon of Dijon Mustard

  • Pita bread

  • 1 cup of Olive Oil

  • Salt and pepper for taste


For the sauce

  • 3 tablespoons of Greek yogurt (s)

  • 2 tablespoons of crushed garlic

  • 1 teaspoon Curry-ous

  • 1 teaspoon of Vinegar

  • 2 teaspoons of lemon juice

  • Salt and pepper for taste


For the salad

  • Salad

  • Red onion

  • Cucumber

  • Tomato

  • 1 bunch of cilantro

  • 3 teaspoon of lemon juice

  • 1 teaspoon of vinegar

  • Salt and pepper for taste


Optional

  • French Fries

PREPARATION

  1. Clean thoroughly the chicken then the meat. Combine the meat and the chicken for the marinade in a freezer bag with 1 tablespoon of each of these spices: Mechoui, Curry-ous, 7-Herbs and Garlic; with lemon juice, vinegar and Dijon mustard

  2. Close and shake to thoroughly impregnate them. Keep cool.

  3. Preheat the oven to 350 F

  4. Heat a large skillet on the stove. Grease with the olive oil, then cook the chicken cutlets medium high until they have a nice color on both sides, then the meat. Yes, you have to cook them separately but then combine them together once it's all cooked.

  5. Grease a cookie sheet and slice the chicken and meat with scissors, then place the chicken in there, then the meat.

  6. Once it's all in the cookie sheet, marinate again the meat and the chicken in the cookie sheet with the remaining spices. Salt and pepper for taste before placing the cookie sheet in the oven for 10-15 minutes

  7. In the meantime, peel the garlic and crush it

  8. Combine with the rest of the ingredients for the yogurt sauce in a bowl, film and place in the fridge until ready to serve.

  9. Wash the salad and cut into a chiffonade. Peel the cucumber, remove the seeds and cut into small cubes. Peel and chop the red onion.

  10. Wash and chop the coriander. Mix all the salad ingredients and season with olive oil, vinegar and lemon juice.

  11. The meat combo should be ready by now. We usually add freon fries in there so please feel free to do so. Now is the fun part!

  12. Open the pita bread in half and flatten them. Fill with salad, meat combo slices, French fries and add 1 tablespoon of sauce.

  13. Roll the chawarma and wrap in a sheet of parchment paper.
