Hey there Masset Chefs!
Did she just say oven smoked chicken? Yeah I did ... and probably by now, you should realize how obsessed I am with my oven... so surprise! Uhm no, let's just not do this.
I have been introduced to smoked chicken at a very young age and at the time, Masset would order them from a colleague of her. We would use it on almost anything we cooked at home; salads, yassa, pastas or just by itself, you really naaame it. When we got to the US, we would basically just have it at barbecues and that definitely wasn't working. I decided to learn how to do it and kinda became a magician, more like a scientist in the kitchen, mixing spices and oils like I was in Einstein's lab. All I was missing was a white coat and goggles. LOL. I just did not say that...
Let's cut straight to the chase now. You all requested it on my social media so here it is: MY OVEN SMOKED CHICKEN RECIPEEE.
For God's sake why did I sound so theatrical?
INGREDIENTS
Rice
4 cups of rice
1 can of mixed vegetables
2 tablespoons of butter
Salt and Pepper
1 tablespoon 7-Herbs and Garlic
1 garlic clove
Cilantro
Sauce
Mushrooms
3 onions
1 garlic clove
1 teaspoon of Dijon Mustard
1 tablespoon Jerky
Salt and Pepper
1 teaspoon of Vinegar
2 tablespoons of Olive Oil
Cilantro
2 sweet peppers
You will also need a deep foiled pan and some aluminium foil to cover the chicken, once in the oven. Make sure to also have a toothpick on your side. Don't ask why yet.
PREPARATION
Let's make the chicken first!
First, start by preheating the oven to broil or the maximum degree. Then, proceed on cleaning your chicken. Make sure to rub it with some salt and lemon juice to get it really clean and fresh. Once your chicken is all clean, proceed by mixing your spices in a bow; by spices, I mean All BBQ, Jerky and the garlic powder. Once you have it all mixed up, melt the butter in the microwave for 30 seconds. Pour the melted butter over the chicken to give it that moist before anything else. Then, proceed by rubbing the exquisite mix inside-out and all over the poultry. Finish by adding the vinegar; it will help you get the spices all over the chicken.
Now, proceed by spraying your pan with some coconut oil spray. You can choose any other spray (butter, olive oil, vegetable, canola oil, it's really up to you). Coconut Oil is universally known for its moisture and spraying it around will help you lock that moisture during the preparation.
After spraying your pan, place the chicken inside and spray the coconut oil all over it. Now, make sure to hermetically seal the pan, I really insist on this step because you better believe this will make your chicken tender and full of flavor (this trick will also retain the smoke flavor hehe). I bet you were just, right now, wondering about the use of the toothpick, right? Now is the perfect time to grab it. Start by poking the aluminum foil that is covering your pan. Just make little holes to allow the vapor of the preparation to delicately escape. Place the pan at the very bottom, in the oven, with a straight contact with the heat and keep it to broil set.
Make sure to occasionally (every 15-20mn) check your chicken before it burns since it's at the very bottom rack. When the water starts to disappear, keep the pan where it is for 10 more minutes before moving it to one rack above and getting rid of the cover. At this point, your chicken is all tender, however not having the cover will allow it to be "grilled."
Cut your sweet peppers and pour them over the chicken. Drizzle some lemon juice on it and make sure to occasionally spray the overall to keep it moist.
Now, we up to the rice and the sauce!
Clean the rice and cook using your rice cooker like you'd normally do. Once it's all cooked, set aside. In a very large pot or pan, melt the butter and saute the garlic over medium heat for about 1 minute, but not until it's browned. Then sprinkle the 7-Herbs and garlic as well as some salt and pepper. From here, add the rice to stir and fry for 5 minutes. You should also be able to smell the amazing aroma of the fried rice. Once it looks like it's all flavored, add the mixed vegetables and keep on stirring for 3 more minutes then remove from the stove
For the sauce, peel the onions and cut them in round slices. Marinate with mustard, vinegar, jerky and cilantro. Clean and cut up the mushrooms. Marinate with salt and pepper. Heat the olive oil on a pan and add the mushrooms. Saute for 5 minutes or until a little brown then add the marinated onions. While the onions are cooking, cut up the sweet peppers and add to the sauce. Stir for 5 minutes then add a cup of water. Let it cook for like 10 minutes on low to medium heat then remove from stove
Et voila! Serve it all together and add vegetables if you like. As usual, make sure to let us know how it went.
