Harissa is a red pepper puree originating in Tunisia and has become a true emblem of Maghreb cuisine. Traditionally, to obtain harissa, the red pepper is dried in the sun and then finely crushed. Depending on the recipes and the regions, garlic, fresh or dried tomatoes and various spices and herbs: salt, coriander, caraway, cumin, mint, etc. are added to the red pepper puree thus obtained.
